2:30 AM Hillbilly Special — the kind of recipe born when the fridge is whispering bad ideas and your brain is running on fumes and pure ambition.
Hillbillies’ 2:30 AM Crisis-Management Skillet
Perfect for when it’s too late to sleep and too early to function.
Ingredients
• 4 eggs (or however many survived the last grocery run)
• 3 slices bacon or a fistful of sausage crumbles you found hiding behind the mustard
• 1 potato, preferably not sprouting tentacles
• A heroic handful of shredded cheese• 1 green onion, or just something green so you can pretend this is healthy
• Pinch of salt and pepper
• Hot sauce, ketchup, or whatever condiment was left out on the counter
• One skillet that screams “not again”
How to wrangle this critter
1. Hack that potato into chunks like you’re auditioning for a cooking show called Barely Awake & Questionably Safe.
2. Toss it into the skillet with a glob of butter or leftover bacon grease. If it pops at you, that means it loves you.
3. Add bacon or sausage. If it starts sizzling loudly, congratulate yourself for finally accomplishing something today.
4. Crack the eggs straight into the chaos. Stir like you’re trying to erase your mistakes.
5. Throw cheese on top as if you’re bribing the universe for mercy.
6. Add the green onion so your future self can say, “See? Vegetables.
7. Hit it with hot sauce or ketchup. No measuring. Just the energy of someone who has given up trying to measure anything at 2:30 AM.
8. Eat directly from the skillet like a frontier hero who ran out of clean plates and patience.
